Thickener Agar-agar 900
Agar-agar 900 – neutral jelly which is received from red and brown seaweed. And the most interesting, in our country it is used generally in confectionery – for production of fruit jelly, a zephyr, jelly, frozen.
The strongest zheliruyushchy agent of a phytogenesis capable to form gel at much smaller concentration, than gelatin. Less than 1% of an agar to the mass of a ready-made product for formation of jelly are required.
The agar is mix of different carbohydrates and other substances which are extracted from several types of red seaweed long ago.
Use in the confectionery industry by production of fruit jelly, jelly, when receiving jellied and fish meats, at production of ice cream where it prevents formation of kristallik of ice, and also at clarification of juice.
